Tik Tok Viral Baked Feta Pasta

A Finnish blogger is credited with creating the simple baked pasta. The original recipe credit goes to Helsinki-based @liemessa (On instagram, #bakedfetapasta.)

I saw it on New York Times food columnist Melissa Clark’s Instagram stories. I made it, loved it, and now sharing it with you. I added rotisserie chicken to “beef” up the protein, but without it, it makes a lovely vegetarian entree.




7-ounce slab of feta

5 cloves garlic, peeled and sliced (or smashed!)

2 pints cherry or grape tomatoes (I used both red/gold colors)

45 mixed sprigs of herbs such as rosemary, thyme, oregano, parsley

Drizzle of olive oil

Fresh ground black pepper

12 ounces bowtie (or other hefty) pasta

3 cups boiling water

11/4 teaspoon kosher or sea salt

1/8 teaspoon red chile flakes (or more)

Optional: 2 cups shredded rotisserie chicken (optional, about half of a chicken)

Optional garnish: chopped fresh herbs and grated Parmesan


Preheat oven to 400F. Place feta slab in center of a 9X13 baking dish (I use glass).

Scatter garlic, tomatoes, and herbs around feta.

Drizzle with good glug of everyday olive oil (can use EVOO, but not the super special expensive one you reserve for finishing). Grind fresh black pepper over the feta.

Roast uncovered for 40 minutes, until you start to see color on the tomatoes.

Remove pan from oven and carefully place bowtie pasta all over the top in an even layer. Whisk salt and chile flakes into boiling water. Pour water, gently, over pasta. Cover with foil and bake for 18 minutes.

Remove from oven, top with room temperature rotisserie chicken if using. (It will seem like there is too much liquid, but it will be absorbed after the rest.) Let stand for 10 minutes.

Remove cover and stir. Serve in warm bowls, garnish with chopped herbs and fresh grated Parmesan, if desired.
