Cotija is a Mexican cheese also known as Queso Anejado or “aged cheese”. The taste is salty and slightly pungent, a bit like feta. It crumbles easily, making it a good choice for sprinkling on salads, soups and bean dishes. In the southwest, you can generally find cotija and other Mexican cheeses such as queso fresco in the dairy section of any grocery store. If your grocer doesn’t carry cotija, try looking in a Mexican or Latin market. If all else fails, just substitute feta.
